Quinoa is a flowering plant with white, red or black seeds. Native to South America, it was already in use at the time of the Inca and the Aztecs, and has an appearance similar to that of a cereal, though it is not one. Unlike true cereals, it contains all 9 amino acids essential for the organism. It is rich in fibre and minerals such as phosphorus, magnesium and iron, and has a high protein content.
